Director of Dining Services Keith has been the food industry over 22 years - most recently as the Director of Dining Service at Southern Illinois University in Carbondale Illinois. He is a certified Food service Management Professional. Keith is married with three kids; loves golf; hunting and fishing. General Manager- The PUB Ellen has been working in the food service industry for 8 years and has spent more than 5 of those years at The Pub. She recently graduated from The University of Texas at Dallas with a BA in Art and Performance. In her free time she enjoys painting, photography and going to concerts. Beau Wootten

Marketing Director Originally from New Orleans, Beau Wootten joins the Dining Services team with nearly seven years of work experience in the foodservice industry. Throughout his career, he has been highly involved in the development and marketing of various foodservice concepts and is excited to bring his knowledge and expertise to UTD. In addition to his work history, Beau has earned his MS in Hospitality and Tourism Management from the University of New Orleans. |

Raul Pastrana

Executive Chef Raul has 15 years of experience in the food service indsustry. In 1997, he enrolled in the culinary program at Universidad Del Este in Carolina, Puerto Rico. His recent experience has been as Executive Chef with Cafe 133 in Georgia Pacific. Raul's positive and personable attitude makes him a pleasure to work with. |
